2025 Sauternes: vintage quality and profile of the wines
Near-ideal weather conditions for noble rot
In Sauternes, the 2025 growing season unfolded in a way that came remarkably close to textbook conditions. These highly favourable conditions have produced fine botrytised wines from noble rot, and the quality more than justifies the current enthusiasm.
An exceptional weather pattern
It all began with grapes reaching full ripeness early, from mid-August, with crops in pristine condition. Sémillon grapes showed intense, complex aromas of white peach, apricot and pear, while the Sauvignon Blanc retained striking acidity, which is quite remarkable for such a sunny vintage.
Rainfall at the end of August and in the first half of September then arrived at just the right time, encouraging widespread development of Botrytis cinerea while avoiding any drift towards undesirable forms of rot. A subsequent period of dry, breezy weather allowed the grapes to concentrate, with harvesting effectively starting around 20 September.
Three to four passes of perfect purity
Under these ideal conditions, three to four successive passes through the vineyard were carried out, with varying levels of concentration depending on terroir and picking dates. While initial yield potential was low, reflecting the poor floral induction conditions in 2024, the picking efficiency proved exceptionally high, resulting in a final crop of very satisfactory volume. The musts are remarkably pure, with strong aromatic potential.
A rich, powerful vintage, with freshness to watch
This is precisely the key question for Sauternes in 2025. The vintage has produced particularly rich, powerful wines, with residual sugar levels often exceeding 140 g/L among the Premiers Grands Crus Classés. Yields remain in line with recent vintages (12.6 hl/ha across Sauternes-Barsac), pointing to a balanced growing season overall.
The main point of attention this year is freshness: some wines may lack that extra lift of balancing freshness so essential in sweet wines, and which ultimately defines a truly memorable vintage. That said, the leading estates have clearly risen to the challenge.
The French wine magazine La Revue du Vin de France affirms this view: “After the exceptional richness of 2022 and 2023, the 2025 Sauternes show completeness and balance, with a poised, assured evolution ahead.”
On tasting: brilliant, balanced sweet wines
After ageing, the 2025 Sauternes wines reveal a highly appealing aromatic profile, combining the brightness of candied citrus, white flowers and honeyed notes, with a silky texture and a finish of great purity. The University of Bordeaux’s Institute of Vine and Wine Science (ISVV) notes that the wines “appear brilliant, combining aromatic intensity, with nuances of candied citrus and white flowers and a refined texture.”
The year’s conditions, with a near-perfect alternation of wet and dry periods allowing for both the development of noble rot and the concentration of the grapes, provided winemakers with exceptional raw material to work with. Blends show a range of complementary balances, pointing to considerable complexity.
iDealwine’s favourites from Sauternes in 2025
2025 Château Doisy Daëne

Doisy Daëne delivers one of its finest performances in 2025. While the first wine scores 93–95 points from La Revue du Vin de France, it is above all L’Extravagant de Doisy Daëne that stands out, singled out by Colin Hay as one of the two best wines of the appellation, with an impressive 97–99 points from The Drinks Business.
On tasting, the first wine already shows a harmonious, refined profile. The nose reveals fresh pineapple and subtle vanilla notes, which carry through to the palate, where the wine combines an elegant, weightless substance, richness, generosity and a superb length.

2025 Château Guiraud
A Premier Grand Cru Classé of Sauternes and a pioneer of biodynamics in the appellation, Château Guiraud has produced a 2025 of real distinction. Its blend of Sémillon (65%) and Sauvignon Blanc (35%), fermented with native yeasts, offers a style that is both modern and deeply rooted in its terroir.
The nose opens on floral notes alongside aromas of caramelised lemon, baked apple, candied citrus and pineapple. The palate is juicy and well balanced, supported by a fine thread of minerality. The overall impression combines generosity and freshness beautifully.
2025 Château Suduiraut

Suduiraut is widely recognised as one of the two standout wines of the year in Sauternes, with scores of 97–99 points from The Drinks Business, 96 from Decanter and 96–98 from La Revue du Vin de France, which describes it as follows: “It impresses with its intensity and fullness. The wine is dense, with a rare tactile grain for a Sauternes sweet wine, with beautiful length. A proud wine that fills the palate without ever becoming heavy, revealing superb freshness on the finish.”
On the nose, it shows aromas of fresh pineapple, candied citrus and honeyed floral notes. The palate stands out for its elegance despite its richness, with remarkable freshness ensuring superb balance and a long, lingering finish.
A monumental wine that firmly establishes 2025 as a great Sauternes vintage.
