To start with, it’s crafted from seven grape varieties allowed in the region and following fermentation, the wine is aged in a solera system, which is the same process used to age sherry. This is where wine is moved through different barrels as it ages, going from those containing the youngest wines to the oldest. This results in a complex wine with indulgent notes of yellow and white fruit as well as almonds.
