With small game, we recommend the delicacy of Burgundian Pinot Noir (Volnay Premier Cru Clos des Santenots 2010 from Jacques Prieur and Chambolle-Musigny Premier Cru Les Feusseulottes 2010 from Georges Mugneret-Gibourg) or a Loire red (Saumur-Champigny La Marginale 2005 from domaine des Roches Neuves and Sancerre La Moussière 2012  from Alphonse Mellot). If you prefer the flavor and texture of larger game, for instance a wild boar stew, we have THE perfect wine(s)… Opt for a tannic wine from the northern Rhône (Côte-Rôtie 2005 from domain Jamet), the southern Rhône (Châteauneuf-du-Pape 2005 from Château Rayas), Provence (Bandol Cabassaou 2003 from domain Tempier) and the Roussillon (La Muntada 2001 from domain Gauby).

What ingredient better symbolizes this season than mushrooms? With porcini mushrooms, try a cru bourgeois from the Médoc such as a Château Le Crock 1990. For the finesse of chanterelles, the delicate tannins of a Jura red (Côtes-du-Jura Cuvée de l’Enfant Terrible 2016 from Jean-François Ganevat). Combine the aromatic intensity of black truffles with a flavourful Languedoc cru (the 2015 from Grange des Pères for instance).

We’ve only mentioned white wines so far, yet there’s a whole world of superb white wines for the season. Roast pumpkin, chestnut soups, chicken with morels, fish in creamy sauces: all of these delicious dishes will combine very well with white wines from the Jura (Château-Chalon 1999 from Jean Macle), the Loire (Savennières Clos de la Coulée de Serrant 2007), Burgundy (Puligny-Montrachet Premier Cru Les Combettes 2010  from Etienne Sauzet) or the Rhône (Châteauneuf-du-Pape 2016 from Clos Saint-Jean).

The cooler temperatures are the ideal opportunity to taste some of your favourite sweet wines. End a meal with a warming Altenberg de Bergheim Grand Cru 1999 from Marcel Deiss, Sauternes Crème de Tête 1953 from Château Gilette or Tokay Aszu 5 Puttonyos 2011 from domain Disznoko.
